1 cup basmati rice

2 cups vegetable or chicken broth (or water)

1 tablespoon turmeric powder

1 teaspoon salt (adjust to taste)

1 tablespoon olive oil or coconut oil

1 small onion, finely chopped

2 cloves garlic, minced

1 bay leaf

1 teaspoon cumin seeds

½ cup peas (fresh or frozen)

½ cup red bell pepper, diced

¼ cup fresh cilantro or parsley, for garnish

Lemon wedges, for serving

Instructions
 

Rinse the Rice: Begin by rinsing the basmati rice under cold water until the water runs clear. This helps remove excess starch and keeps the rice fluffy.

    Heat the Oil: In a medium-sized pot, heat the olive or coconut oil over medium heat. Add the cumin seeds and sauté for about 30 seconds until fragrant.

      Sauté Aromatics: Add the chopped onion to the pot and sauté until translucent (about 4-5 minutes). Then, stir in the minced garlic and sauté for an additional minute until fragrant.

        Add Spices: Incorporate the turmeric powder and salt into the pot, stirring well to combine with the onions and garlic. Cook for 1 minute to toast the spices.

          Combine Rice and Liquid: Add the rinsed rice to the pot, stirring gently to coat the grains with the spice mixture. Pour in the broth (or water) along with the bay leaf. Increase heat and bring to a gentle boil.

            Simmer the Rice: Once boiling, reduce the heat to low and cover the pot with a tight-fitting lid. Allow the rice to simmer for about 15 minutes, or until all the liquid is absorbed.

              Add Vegetables: Once the rice is cooked, remove the pot from heat and add the peas and diced red bell pepper. Fluff the rice gently with a fork, incorporating the vegetables, and cover again for an additional 5 minutes to allow the peas to heat through.

                Garnish and Serve: Discard the bay leaf and transfer the yellow rice to a serving dish. Garnish with chopped cilantro or parsley and serve with lemon wedges on the side for an extra zing!
