2 cups whole wheat flour

1 cup all-purpose flour (plus more for dusting)

1 teaspoon salt

1 tablespoon sugar

1 packet (2 ¼ teaspoons) instant yeast

1 tablespoon olive oil

1 cup warm water (around 110°F or 43°C)

Combine Dry Ingredients: In a large mixing bowl, combine the whole wheat flour, all-purpose flour, salt, sugar, and yeast. Whisk together until well blended.

    Mix Wet Ingredients: In a separate bowl, mix the warm water and olive oil.

      Combine and Knead: Gradually pour the wet mixture into the dry ingredients, stirring until a rough dough starts to form. Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

        First Rise: Place the kneaded dough in a lightly oiled bowl, cover with a damp cloth or plastic wrap, and let it rise in a warm area for about 1 hour, or until doubled in size.

          Preheat Oven: Preheat your oven to 475°F (245°C). If using a baking stone, place it in the oven while it preheats. Alternatively, use a baking sheet lined with parchment paper.

            Shape Pitas: Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a ball and then flatten into a disc about ½ inch thick. Dust with a small amount of flour if they stick.

              Second Rise: Let the discs rest for about 10-15 minutes while the oven continues to heat.

                Bake: Place the pitas on the hot baking stone or prepared baking sheet, ensuring there’s space between them. Bake for 5-7 minutes until they puff up and turn slightly golden.

                  Cool: Remove the pitas from the oven and let them cool in a clean kitchen towel for about 5 minutes to keep them soft.
