Ingredients

1 lb ground chicken

1 cup fresh spinach, finely chopped

1/2 cup white cheddar cheese, shredded

1/4 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1 clove garlic, minced

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon Dijon mustard

1 tablespoon olive oil

4 whole wheat burger buns

Lettuce, tomato, and avocado for toppings

Instructions

In a large mixing bowl, combine the ground chicken, chopped spinach, white cheddar cheese, breadcrumbs, Parmesan cheese, minced garlic, onion powder, salt, pepper, and Dijon mustard. Use your hands to combine the ingredients thoroughly until just mixed.

Divide the mixture into four equal portions and shape them into burger patties, about 1/2 inch thick.

Heat olive oil in a large skillet over medium heat. Once hot, carefully place the chicken patties in the skillet, making sure not to overcrowd the pan. Cook for about 6-7 minutes on one side until golden brown.

Flip the burgers and continue cooking for an additional 5-6 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).

While the burgers are cooking, you can toast the whole wheat burger buns in a separate pan or under the broiler until lightly golden.

Once the burgers are done, assemble them on the toasted buns with lettuce, tomato slices, and avocado. Serve hot and enjoy!
