Wheat Berries Recipe; Egyptian Belila

1 cup whole wheat berries

4 cups water (for boiling)

1 tablespoon olive oil

1 teaspoon sea salt

1 teaspoon ground cumin

1 teaspoon ground coriander

1 tablespoon lemon juice

1 small onion, finely chopped

2 garlic cloves, minced

1/4 cup chopped fresh parsley or cilantro

1/4 cup raisins or dried apricots, chopped (for a touch of sweetness)

Freshly ground pepper, to taste

Optional toppings: sliced almonds, crumbled feta cheese, or a dollop of yogurt

Instructions
 

Rinse the wheat berries under cool running water to remove any debris.

    In a large pot, bring the 4 cups of water to a boil. Add the wheat berries and sea salt. Reduce the heat to low and cover, letting it simmer for about 50-60 minutes, or until the berries are tender but still chewy.

      While the wheat berries are cooking, heat the olive oil in a skillet over medium heat. Add the chopped onion and sauté until golden brown, about 5-7 minutes.

        Add the minced garlic to the skillet and sauté for another minute, until fragrant.

          Stir in the ground cumin, ground coriander, and cook for an additional minute to toast the spices.

            Once the wheat berries are ready, drain any excess water if necessary, and add them to the skillet with the sautéed onion and spices. Mix well to combine.

              Drizzle the lemon juice over the mixture and stir in the chopped parsley or cilantro and raisins or dried apricots. Season with freshly ground pepper to taste.

                Remove from heat, and let it sit for a few minutes to allow the flavors to meld.

                  Serve warm as a main dish or a hearty side, garnished with optional toppings like sliced almonds, crumbled feta cheese, or a dollop of yogurt to enhance the creaminess.
