Vegetarian Phyllo Cups Appetizer

1 package of phyllo pastry (1 lb), thawed

1/2 cup unsalted butter, melted

1 cup ricotta cheese

1 cup sautéed spinach (fresh or frozen, water squeezed out)

1/2 cup feta cheese, crumbled

1/4 cup grated Parmesan cheese

1/4 cup sun-dried tomatoes, chopped

1/4 cup fresh basil, chopped

Salt and pepper to taste

1 tsp garlic powder

1 tsp onion powder

Optional: Balsamic glaze for drizzling

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Phyllo Pastry: Lay out a sheet of phyllo pastry on a clean work surface. Brush lightly with melted butter. Lay another sheet on top and brush again with butter. Repeat this process until you have 6 layers of phyllo.

      Cut and Shape Cups: Using a sharp knife, cut the stacked phyllo into squares (roughly 4x4 inches). Gently press each square into the cups of a mini muffin tin, forming a cup shape. Repeat for the remaining sheets and butter.

        Mix Filling: In a mixing bowl, combine the ricotta cheese, sautéed spinach, feta cheese, Parmesan cheese, sun-dried tomatoes, fresh basil, garlic powder, onion powder, salt, and pepper. Mix well until all the ingredients are thoroughly combined.

          Fill Cups: Spoon the filling mixture into each phyllo cup until they are generously filled.

            Bake: Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the phyllo cups are golden and crisp.

              Serve: Once baked, remove them from the oven and allow to cool for a few minutes. Drizzle with balsamic glaze if desired. Serve warm or at room temperature.
