Vanilla Crepes

Ingredients
  

1 cup all-purpose flour

2 large eggs

1 1/2 cups milk (whole or 2%)

2 tablespoons sugar

1 teaspoon pure vanilla extract

1/4 teaspoon salt

2 tablespoons melted unsalted butter (plus extra for cooking)

Optional toppings: fresh fruits, whipped cream, chocolate sauce, maple syrup

Instructions
 

In a mixing bowl, whisk together the flour, eggs, and about half of the milk until smooth.

    Gradually add the remaining milk, sugar, vanilla extract, and salt. Whisk until the mixture is lump-free.

      Stir in the melted butter until well combined. Allow the batter to rest for at least 30 minutes at room temperature. (This helps make the crepes more tender.)

        Heat a non-stick skillet or crepe pan over medium heat. Lightly butter the surface.

          Pour about 1/4 cup of batter into the pan and quickly swirl it around to evenly coat the bottom. Cook for about 1-2 minutes, or until the edges start to lift and the bottom is lightly golden.

            Carefully flip the crepe using a spatula and cook for an additional 1-2 minutes on the other side. Transfer to a plate and keep warm.

              Repeat with the remaining batter, adding more butter to the pan as needed. Stack the crepes on top of each other as you cook them.

                Serve the crepes warm with your choice of toppings like fresh fruits, a drizzle of chocolate sauce, whipped cream, or maple syrup.
