Ingredients

2 cups all-purpose flour

1 packet (2 1/4 teaspoons) active dry yeast

1 teaspoon sugar

3/4 teaspoon salt

3/4 cup warm water (110°F)

1 tablespoon olive oil

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 cup sliced pepperoni or diced vegetables (bell peppers, mushrooms, spinach)

1 egg (for egg wash)

1 teaspoon Italian seasoning

Marinara sauce (for dipping)

Fresh basil leaves (for garnish)

Instructions

In a bowl, combine the warm water, sugar, and yeast. Let it sit for about 5–10 minutes until frothy.

In a separate large bowl, mix the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Mix until a dough forms.

Knead the dough on a floured surface for about 5–7 minutes until smooth and elastic. Place in an oiled bowl, cover with a cloth, and let it rise in a warm place until doubled in size, about 1 hour.

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

In a bowl, combine ricotta, mozzarella, Parmesan, pepperoni or veggies, and Italian seasoning. Mix well.

Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a heart shape about 1/4 inch thick.

On one half of each heart, add a generous scoop of the cheese filling. Flip the other half over, sealing the edges by pressing with a fork.

Brush the tops of the calzones with the beaten egg for a golden finish.

Bake in the preheated oven for 15–20 minutes or until golden and bubbly.

Serve warm with marinara sauce for dipping and garnish with fresh basil.
