Tuscan Chicken Pasta Recipe

10 oz penne pasta

2 tbsp olive oil

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

Salt and pepper, to taste

3-4 cloves garlic, minced

1 cup sun-dried tomatoes, sliced

1 cup baby spinach

1 cup heavy cream

1/2 cup chicken broth

1/2 cup grated Parmesan cheese

1 tsp dried Italian herbs (basil, oregano, thyme)

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Cook the Chicken: Heat olive oil in a large skillet over medium heat. Season the chicken pieces with salt and pepper. Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add the minced garlic and sun-dried tomatoes. Sauté for about 2 minutes until fragrant.

        Make the Sauce: Pour in the chicken broth and heavy cream, stirring to combine. Allow the mixture to simmer for about 3-4 minutes until it's slightly thickened.

          Add the Spinach: Stir in the baby spinach, and cook just until wilted.

            Combine Ingredients: Return the cooked chicken to the skillet. Add the grated Parmesan cheese and dried Italian herbs. Stir to combine, and season to taste with additional salt and pepper if needed.

              Mix with Pasta: Add the drained penne pasta to the skillet, tossing everything together until the pasta is evenly coated in the creamy sauce.
