1 lb ground turkey

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 tablespoon taco seasoning (store-bought or homemade)

1 can (15 oz) black beans, rinsed and drained

1 cup corn (frozen or canned)

1 cup cherry tomatoes, halved

1 avocado, diced

1 cup shredded lettuce (romaine or iceberg)

1 cup shredded cheese (cheddar or Mexican blend)

1/2 cup salsa

1/4 cup fresh cilantro, chopped

Lime wedges for serving

Salt and pepper to taste

Instructions
 

Cook the Turkey: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent (about 3-4 minutes). Stir in the minced garlic and bell pepper, cooking for another 2-3 minutes until tender.

    Add Ground Turkey: Increase the heat to medium-high and add the ground turkey to the skillet. Break it into smaller pieces with a spatula and cook until browned (about 5-7 minutes). Season with salt, pepper, and taco seasoning, mixing well.

      Combine Ingredients: Stir in the black beans and corn into the skillet, cooking for an additional 2-3 minutes until heated through. Remove from heat.

        Prepare Salad Bowls: In each salad bowl, start with a base of shredded lettuce. Top with the turkey mixture, cherry tomatoes, diced avocado, and shredded cheese.
