4 boneless, skinless chicken breasts

1 cup fresh pineapple juice

1/2 cup soy sauce

1/4 cup brown sugar

2 tablespoons honey

1 tablespoon grated fresh ginger

3 cloves garlic, minced

1 tablespoon sesame oil

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 cup diced fresh pineapple (for garnish)

2 green onions, sliced (for garnish)

Cooked jasmine rice (for serving)

Instructions
 

Marinate the Chicken: In a large bowl, whisk together the fresh pineapple juice, soy sauce, brown sugar, honey, grated ginger, minced garlic, sesame oil, and red pepper flakes. Season the mixture with salt and pepper to taste. Add the chicken breasts to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour (or up to 8 hours for more flavor).

    Preheat the Grill or Oven: If grilling, preheat your grill to medium-high heat. If baking, preheat the oven to 375°F (190°C).

      Cook the Chicken:

        - For Grilling: Remove the chicken from the marinade, allowing any excess liquid to drip off. Grill on medium-high heat for about 6-7 minutes per side, or until the chicken is cooked through and has beautiful grill marks. If desired, baste with leftover marinade during cooking, being careful to discard any that contains raw chicken.
