Tremendous Crockpot Beef Tips & Noodles

1.5 lbs beef stew meat, cut into bite-sized pieces

1 medium onion, chopped

2 cloves garlic, minced

2 cups beef broth

1 cup mushrooms, sliced

2 tablespoons Worcestershire sauce

1 tablespoon soy sauce

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

3 tablespoons cornstarch (optional for thickening)

1 tablespoon olive oil

8 oz egg noodles

Fresh parsley, chopped (for garnish)

Sear the Beef: In a large skillet, heat the olive oil over medium-high heat. Add the beef tips to the skillet in batches, searing each side until browned (about 3-4 minutes per side). Remove and set aside.

    Sauté the Aromatics: In the same skillet, add the chopped onion and minced garlic, sautéing until the onions are translucent (approximately 2-3 minutes).

      Combine Ingredients in Crockpot: Transfer the seared beef, sautéed onions, garlic, sliced mushrooms, beef broth, Worcestershire sauce, soy sauce, thyme, paprika, salt, and pepper into the crockpot. Stir well to combine all ingredients.

        Cook: Cover the crockpot and cook on low for 6-8 hours or high for 4 hours until the beef is tender.

          Thicken the Sauce (Optional): About 30 minutes before serving, if you prefer a thicker sauce, mix cornstarch with 2 tablespoons of water in a small bowl to create a slurry. Stir this into the crockpot and let it cook on high for the remaining time.

            Cook the Noodles: Once the beef is cooked, prepare the egg noodles according to package instructions. Drain and set aside.

              Serve: When ready to serve, mix the cooked egg noodles into the beef mixture in the crockpot or serve the beef tips over the noodles. Garnish with fresh parsley.
