2 cups ripe cherry tomatoes, diced

1/4 cup finely chopped red onion

2 garlic cloves, minced

1/4 cup balsamic vinegar

1/4 cup brown sugar

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper to taste

1 baguette or Italian bread, sliced

1/4 cup extra-virgin olive oil

Fresh basil leaves for garnish (optional)

Make the Tomato Jam: In a medium saucepan, combine diced cherry tomatoes, red onion, garlic, balsamic vinegar, brown sugar, thyme, salt, and pepper.
