Ingredients

1 cup strong brewed coffee, cooled to room temperature

1 tablespoon coffee liqueur (optional)

3 large eggs, separated

3/4 cup granulated sugar

1 cup mascarpone cheese

1 teaspoon vanilla extract

1 cup heavy whipping cream

24 ladyfinger cookies (savoiardi)

Unsweetened cocoa powder, for dusting

Dark chocolate shavings or cocoa nibs (for garnish)

Instructions

Prepare the Coffee Mixture: In a shallow dish, combine the brewed coffee with coffee liqueur, if using. Set aside to cool completely.

Whisk Egg Yolks and Sugar: In a mixing bowl, whisk the egg yolks and sugar together until the mixture is pale and creamy. This should take about 5 minutes.

Add Mascarpone: Fold the mascarpone cheese and vanilla extract into the egg yolk mixture until smooth and well combined.

Whip Egg Whites: In a separate clean bowl, beat the egg whites until soft peaks form. Carefully fold the beaten egg whites into the mascarpone mixture gently, taking care not to deflate the whites.

Whip the Cream: In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until smooth and creamy.

Dip the Ladyfingers: Quickly dip each ladyfinger into the coffee mixture, making sure not to soak them, and arrange them in a single layer in an 8x8-inch baking dish.

Layer the Mixture: Spread half of the mascarpone mixture over the layer of ladyfingers evenly. Repeat the process by dipping the remaining ladyfingers and placing them on top of the mascarpone layer, then spread the remaining mascarpone mixture over this layer.

Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the dessert to set.

Serve: Before serving, dust the top with unsweetened cocoa powder and garnish with dark chocolate shavings or cocoa nibs.
