Ingredients
  

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1/4 cup granulated sugar

2 tablespoons brown sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 large egg

1 cup buttermilk (or 1 cup milk + 1 tablespoon vinegar)

1/4 cup melted butter

1 teaspoon vanilla extract

1/2 cup chocolate chips (optional)

Powdered sugar for dusting (optional)

Fresh berries for serving (optional)

Instructions
 

In a large mixing bowl, sift together the flour, cocoa powder, granulated sugar, brown sugar, baking powder, baking soda, and salt until well combined.

    In a separate bowl, whisk together the egg, buttermilk, melted butter, and vanilla extract until smooth.

      Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are okay. If desired, fold in the chocolate chips for an extra chocolatey bite.

        Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.

          For each pancake, pour about 1/4 cup of batter onto the hot skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

            Flip and cook for another 1-2 minutes on the other side, until cooked through. You may want to adjust the heat if they are browning too quickly.

              Repeat with the remaining batter, greasing the skillet as needed.
