4 medium sweet potatoes, peeled and cubed

1/2 cup unsweetened almond milk (or milk of choice)

1/4 cup maple syrup

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1 cup brown sugar

1 cup rolled oats

1/2 cup all-purpose flour (or gluten-free flour)

1/2 cup pecans or walnuts, chopped

1/4 cup unsalted butter, melted

1/2 teaspoon baking powder

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Boil Sweet Potatoes: In a large pot, bring water to a boil. Add the cubed sweet potatoes and cook until tender, about 15-20 minutes. Drain and let cool slightly.

      Mash Sweet Potatoes: In a large bowl, mash the cooked sweet potatoes with a potato masher or fork until smooth.

        Mix Base Ingredients: Stir in the almond milk, maple syrup, vanilla extract, cinnamon, nutmeg, and salt until well combined.

          Prepare Crunch Topping: In a separate bowl, mix together the brown sugar, rolled oats, flour, chopped nuts, melted butter, and baking powder until crumbly.

            Assemble Casserole: Spread the sweet potato mixture evenly in a greased 9x13 inch casserole dish. Sprinkle the crunch topping evenly over the sweet potato layer.
