SUMMER DINNER - Sausage and Veggies Skillet with Bell Peppers, Zucchini, and Corn

Get ready for a flavor-packed experience with this Sizzling Summer Sausage & Veggies Skillet! This vibrant dish combines juicy Italian sausage with fresh bell peppers, zucchini, and sweet corn, all sautéed to perfection in just 30 minutes. Seasoned with smoked paprika and oregano, it's a delightful summer meal. Perfect for busy weeknights or a quick weekend dinner. Ingredients
  

1 lb Italian sausage (sweet or spicy, based on preference)

2 medium bell peppers (red and yellow, sliced)

1 medium zucchini (sliced into half-moons)

1 cup fresh corn kernels (or 1 cup frozen corn, thawed)

1 medium onion (diced)

3 cloves garlic (minced)

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley or basil (for garnish)

Lemon wedges (for serving)

Instructions
 

Prepare the Ingredients: Slice the bell peppers, zucchini, and onion, and mince the garlic. Set aside.

    Cook the Sausage: In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the Italian sausage. Cook until browned and cooked through, about 5-7 minutes. Break it apart with a spatula as it cooks. Once done, remove from the skillet and set aside, leaving the rendered fat in the pan.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion and sauté for 2-3 minutes until translucent. Then add the sliced bell peppers and zucchini. Cook for another 5-7 minutes until the veggies are tender but still crisp.

        Add Garlic and Corn: Stir in the minced garlic, corn, smoked paprika, and dried oregano. Season with salt and pepper. Cook for an additional 2-3 minutes until everything is well combined.

          Combine: Add the sautéed sausage back into the skillet with the vegetables. Stir to mix everything together and heat through for another 2-3 minutes.

            Serve: Remove from heat and garnish with freshly chopped parsley or basil. Serve with lemon wedges on the side for a bright finish.
