Summer Corn Salad

Ingredients
  

4 cups fresh corn kernels (about 6 ears of corn)

1 cup cherry tomatoes, halved

1/2 cup red onion, finely diced

1 cup cucumber, diced

1/4 cup fresh basil, chopped

1/4 cup feta cheese, crumbled

1/4 cup olive oil

2 tablespoons apple cider vinegar

1 teaspoon honey

Salt and pepper to taste

Instructions
 

Start by shucking the corn ears and removing the kernels. You can do this by standing the corn on its base and slicing down the sides with a sharp knife.

    In a large skillet, heat a drizzle of olive oil over medium heat. Add the corn kernels and sauté for 5-7 minutes until they are tender and slightly charred. Remove from heat and let them cool to room temperature.

      In a large mixing bowl, combine the cherry tomatoes, red onion, cucumber, and basil.

        Add the cooled corn to the vegetable mixture.

          In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until well blended.

            Pour the dressing over the salad and toss gently to combine all ingredients evenly.

              Lastly, sprinkle the feta cheese on top and give it one last gentle toss.

                Let the salad chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together. Serve cold or at room temperature.
