Summer Corn and Zucchini Chowder

Ingredients
  

4 ears of fresh corn, kernels removed

2 medium zucchinis, diced

1 medium onion, finely chopped

3 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream

2 tablespoons olive oil

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh basil leaves, for garnish

Optional: Croutons or toasted bread for serving

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, until the onion is translucent.

    Add the minced garlic and smoked paprika to the pot, and cook for another 1-2 minutes, stirring frequently until fragrant.

      Stir in the diced zucchini and corn kernels, and cook for another 5-7 minutes, allowing the vegetables to soften slightly.

        Pour in the vegetable broth and add the thyme. Bring to a gentle simmer and let it cook for about 15 minutes, until the zucchini is tender.

          Reduce heat to low, then use an immersion blender to blend the chowder until desired creaminess (you can leave some chunks for texture or blend it completely smooth).

            Stir in the heavy cream and season with salt and pepper to taste. Heat through for an additional 5 minutes, not bringing it back to a boil.

              Serve warm, garnished with fresh basil leaves and accompanied by croutons or toasted bread if desired.
