Ingredients
  

2 large red onions, thinly sliced

1/4 cup olive oil

2 tablespoons sumac

1 tablespoon lemon juice

1 teaspoon honey or agave syrup (optional)

Salt, to taste

Fresh parsley, chopped (for garnish)

Crumbled feta cheese (optional, for serving)

Instructions
 

In a medium bowl, combine the thinly sliced red onions with a generous pinch of salt. Allow the onions to sit for about 10-15 minutes to release some of their moisture, which will help soften their sharp flavor.

    In a small mixing bowl, whisk together the olive oil, sumac, lemon juice, and honey/agave syrup (if using) to create a flavorful dressing.

      Once the onions have softened, drain and rinse them under cold water to remove excess salt. Squeeze out any remaining moisture gently.

        Combine the rinsed onions with the dressing in the medium bowl, and mix well to ensure all the onion slices are evenly coated.

          Let the mixture sit for at least 30 minutes at room temperature, allowing the flavors to meld together. For best results, refrigerate and marinate for a few hours or overnight.

            Before serving, taste the onion mixture and adjust salt or add more sumac if desired.

              Serve the sumac onions chilled or at room temperature, garnished with fresh parsley and crumbled feta cheese if desired.
