1 cup steel cut oats

4 cups unsweetened almond milk (or milk of choice)

1 tablespoon vanilla extract

2 tablespoons maple syrup (or honey)

1 cup fresh strawberries, hulled and chopped

1/4 teaspoon salt

1/2 teaspoon ground cinnamon (optional)

Toppings: additional strawberries, sliced banana, chia seeds, or nuts

Instructions
 

In a large mixing bowl, combine the steel cut oats, almond milk, vanilla extract, maple syrup, chopped strawberries, salt, and ground cinnamon. Stir well to ensure all the oats are submerged in the liquid.

    Cover the bowl with plastic wrap or transfer the mixture to individual jars with lids. Refrigerate overnight, or for at least 8 hours, to allow the oats to absorb the liquid.

      In the morning, stir the oats to mix well. If the mixture is too thick, you can add a splash of milk to reach your desired consistency.
