1 cup rolled oats

1/2 cup brown sugar, packed

1/2 cup granulated sugar

2 cups fresh strawberries, hulled and sliced

2 cups rhubarb, diced

1/4 cup granulated sugar (for filling)

1 tablespoon cornstarch

1 teaspoon vanilla extract

Zest of 1 lemon

1 tablespoon lemon juice

Preheat Oven: Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish or line it with parchment paper for easy removal.

    Make the Crumble Base: In a mixing bowl, combine flour, oats, brown sugar, granulated sugar, baking powder, and salt. Mix well. Add melted butter and stir until the mixture is crumbly but holds together when pressed. Reserve 1 cup of this mixture for the crumble topping.

      Prepare Fruit Filling: In a separate bowl, mix sliced strawberries and diced rhubarb. Add 1/4 cup granulated sugar, cornstarch, vanilla extract, lemon zest, and lemon juice. Toss gently to combine and set aside.
