Ingredients

2 cups fresh strawberries, hulled and quartered

2 cups fresh peaches, chopped (about 3 medium peaches)

3 tablespoons maple syrup (adjust based on fruit sweetness)

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 cup rolled gluten-free oats

½ cup almond flour

½ cup chopped nuts (such as walnuts or pecans)

1 teaspoon ground cinnamon

¼ teaspoon salt

4 tablespoons coconut oil, melted

2 tablespoons brown sugar (or coconut sugar for refined sugar-free)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Fruit: In a large mixing bowl, combine the quartered strawberries and chopped peaches. Add the maple syrup, lemon juice, and vanilla extract. Gently stir to coat the fruit evenly.

Make the Crisp Topping: In another mixing bowl, combine the rolled oats, almond flour, chopped nuts, ground cinnamon, and salt. Stir in the melted coconut oil and brown sugar until the mixture is crumbly.

Assemble the Crisp: Pour the fruit mixture into a greased 9x9 inch baking dish or similar-sized dish. Evenly distribute the oat topping over the fruit.

Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the fruit is bubbling and the topping is golden brown.

Cool and Serve: Remove the crisp from the oven and allow it to cool slightly before serving. This dessert can be enjoyed warm or at room temperature.
