1 cup all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk (or almond milk for a dairy-free option)

1 large egg

2 tablespoons melted butter (or coconut oil)

1 cup fresh strawberries, hulled and diced

1 teaspoon vanilla extract

Maple syrup, for serving

Whipped cream or yogurt, for serving (optional)

Instructions
 

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

    In another bowl, combine the milk, egg, melted butter, and vanilla extract, mixing until well combined.

      Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are fine.

        Fold in the diced strawberries, ensuring they're evenly distributed throughout the batter.

          Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or additional butter.

            Once hot, pour about 1/4 cup of the pancake batter for each pancake onto the skillet.
