1 ½ cups fresh strawberries, pureed

1 ½ cups all-purpose flour

¾ cup granulated sugar

½ cup unsalted butter, softened

3 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

8 oz white chocolate, chopped

1 tablespoon coconut oil

Sprinkles or crushed nuts for decoration

Instructions
 

Prepare the Cake:

    - Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.

      - In a mixing bowl, combine the pureed strawberries and sugar; mix well.

          - In another bowl, whisk together the flour, baking powder, baking soda, and salt.

            - Gradually add the dry ingredients to the wet mixture, mixing just until combined. Do not overmix.

              Bake the Cake:

                - Pour the batter into the prepared cake pan. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.

                  - Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

                    Create the Cake Pop Mixture:

                      - Once cooled, crumble the cake into a large bowl. Stir in a few tablespoons of strawberry puree until the mixture holds together and is moldable.

                        - Roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper. Freeze for about 30 minutes.

                          Prepare the Coating:

                            - In a microwave-safe bowl, combine the chopped white chocolate and coconut oil. Heat in the microwave in 20-second intervals until melted and smooth, stirring between intervals.
