8 oz (225 g) pasta (spaghetti or fettuccine works well)

1 lb (450 g) Italian sausage (mild or spicy, casings removed)

4 cloves garlic, minced

1/2 cup honey

1/4 cup soy sauce

1 tablespoon apple cider vinegar

1 tablespoon Dijon mustard

1/4 teaspoon red pepper flakes (optional)

2 tablespoons olive oil

1 cup cherry tomatoes, halved

2 cups fresh spinach

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (for serving)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.

    Prepare the Sausage: In a large skillet over medium heat, add olive oil. Once hot, add the sausages, breaking them apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.

      Add Flavor: Once the sausage is cooked, add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

        Create the Sauce: In a bowl, whisk together honey, soy sauce, apple cider vinegar, Dijon mustard, and red pepper flakes (if using). Pour this sauce over the cooked sausage in the skillet. Stir well to combine and let simmer for 2-3 minutes, allowing the sauce to thicken slightly.

          Combine with Pasta: Add the cooked pasta and reserved pasta water to the skillet. Toss everything together until the pasta is well coated with the honey garlic sauce.

            Finish with Vegetables: Stir in the halved cherry tomatoes and fresh spinach. Cook for another 2-3 minutes until the spinach has wilted and the tomatoes are slightly softened. Season with salt and pepper to taste.

              Serve: Remove from heat and garnish with chopped parsley. Serve warm, topped with grated Parmesan cheese if desired.
