1 lb chicken thighs, boneless and skinless

1 cup jasmine rice

2 cups chicken broth

2 tbsp soy sauce

2 tbsp honey

1 tbsp rice vinegar

1 tbsp sesame oil

2 cloves garlic, minced

1-inch piece of ginger, grated

2 green onions, chopped (for garnish)

1 cup steamed broccoli or mixed vegetables

Sesame seeds, for garnish

Salt and pepper, to taste

Marinate the Chicken: In a bowl, combine soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, salt, and pepper. Add the chicken thighs, ensuring they're well coated. Let them marinate for at least 30 minutes, preferably in the refrigerator.

    Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium pot, combine the rinsed rice and chicken broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
