Spinach and Feta Quesadillas (20 minutes)

2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

1 cup shredded mozzarella cheese

4 large flour tortillas

2 tablespoons olive oil

1 clove garlic, minced

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1/4 cup sun-dried tomatoes, chopped (optional)

Fresh cilantro or parsley for garnish (optional)

Sauté the Spinach: In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Then, add the chopped spinach and cook until wilted, about 2-3 minutes. Season with salt, pepper, and red pepper flakes, if using.

    Mix the Filling: In a large bowl, combine the sautéed spinach, crumbled feta cheese, shredded mozzarella, and sun-dried tomatoes (if using). Mix until well incorporated.

      Assemble Quesadillas: Place a tortilla in the skillet over medium heat. Spoon a quarter of the cheese and spinach mixture onto half of the tortilla. Fold the other half over to cover the filling. Press down gently with a spatula.

        Cook the Quesadilla: Add another tablespoon of olive oil to the skillet if necessary. Cook the quesadilla for about 2-3 minutes on each side, until golden brown and crispy. Repeat the process with the remaining tortillas and filling.

          Slice and Serve: Once cooked, remove the quesadillas from the skillet and let them cool for a minute. Cut into wedges and garnish with fresh cilantro or parsley if desired. Serve with your favorite salsa or sour cream on the side.
