Spicy Turkey Cauliflower Rice

1 lb ground turkey

1 medium head of cauliflower, riced (or 4 cups store-bought cauliflower rice)

1 red bell pepper, diced

1 small onion, diced

3 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon chili powder

1 teaspoon cumin

½ teaspoon smoked paprika

½ teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

¼ cup fresh cilantro, chopped (for garnish)

1 lime, juiced

Instructions
 

Prepare the Cauliflower Rice: If using a whole head of cauliflower, remove the leaves and stem, then cut into florets. Pulse in a food processor until the cauliflower resembles rice. Alternatively, use pre-riced cauliflower.

    Cook the Turkey: In a large skillet over medium heat, warm the olive oil. Add the diced onion and red bell pepper, cook for about 3-4 minutes until softened. Add the minced garlic and sauté for another minute until fragrant.

      Add the Turkey: Increase the heat to medium-high and add in the ground turkey. Break it apart with a wooden spoon and cook until browned, about 5-7 minutes. Drain excess fat if necessary.

        Spice it Up: Stir in the chili powder, cumin, smoked paprika, red pepper flakes, salt, and pepper. Mix well to combine, allowing the spices to coat the turkey mixture evenly. Cook for another 2 minutes.

          Incorporate Cauliflower Rice: Add the riced cauliflower to the skillet. Stir everything together, ensuring the cauliflower is mixed well with the turkey and spices. Cook for another 5-7 minutes, stirring occasionally, until the cauliflower is tender but not mushy.

            Finish and Serve: Remove from heat and squeeze fresh lime juice over the top. Garnish with chopped cilantro. Serve hot and enjoy!
