Spicy Shrimp; With Wild Rice Recipe

Spice up your dinner with this Fiery Shrimp Delight! This delicious meal features marinated shrimp cooked to perfection, served over a bed of flavorful wild rice mixed with veggies. With a kick from cayenne and smoked paprika, the shrimp is both tender and zesty thanks to lime juice and zest. Ingredients
  

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

Zest of 1 lime

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

For the Wild Rice:

1 cup wild rice blend

3 cups vegetable broth (or water)

1/2 cup diced red bell pepper

1/2 cup diced onion

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper to taste

2 tablespoons chopped fresh parsley (for garnish)

Instructions
 

Prepare the Wild Rice: In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the diced bell pepper, onion, and minced garlic. Sauté until the vegetables are softened, about 3-4 minutes.

    Cook the Wild Rice: Add the wild rice blend to the saucepan and stir well to combine with the vegetables. Pour in the vegetable broth (or water), bring to a boil, reduce heat to low, cover, and simmer for 45-50 minutes, or until the rice is tender and the liquid is absorbed. Once done, season with salt and pepper and fluff with a fork.

      Prepare the Spicy Shrimp: In a bowl, combine olive oil, smoked paprika, cayenne pepper, garlic powder, onion powder, salt, black pepper, lime zest, and lime juice. Mix well.

        Cook the Shrimp: Add the shrimp to the bowl and toss to coat them evenly in the spicy marinade. Let them marinate for about 10-15 minutes.

          Sauté the Shrimp: In a large skillet over medium-high heat, add the marinated shrimp (without any leftover marinade). Cook for about 2-3 minutes on each side or until the shrimp are pink and opaque.

            Assemble the Dish: Serve the spicy shrimp over a bed of fluffy wild rice, garnishing it with freshly chopped cilantro and parsley for added freshness.
