Spicy Jalapeno Chicken

1.5 lbs boneless, skinless chicken thighs

2 tablespoons olive oil

3 fresh jalapenos, finely chopped (seeds removed for less heat, if desired)

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust for spice preference)

Salt and pepper to taste

1 tablespoon lime juice

2 tablespoons fresh cilantro, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a large bowl, mix olive oil, chopped jalapenos, minced garlic, smoked paprika, ground cumin, onion powder, cayenne pepper, lime juice, salt, and pepper. Add the chicken thighs and toss to coat well. Cover and marinate in the refrigerator for at least 30 minutes (up to overnight for deeper flavor).

    Preheat Oven: Preheat your oven to 400°F (200°C).

      Arrange Chicken: Place the marinated chicken thighs in a single layer on a baking sheet lined with parchment paper. Make sure to spoon some of the leftover marinade over the top for extra flavor.

        Bake: Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and has reached an internal temperature of at least 165°F (74°C).

          Broil for Finish (Optional): For an added char and crispy edges, switch the oven to broil for the last 2-3 minutes of cooking, keeping a close eye to prevent burning.
