4 chicken thighs, skinless and boneless

1 can (400ml) coconut milk

2 tablespoons olive oil

1 medium onion, finely chopped

4 cloves garlic, minced

1-2 red chili peppers, chopped (adjust to your spice preference)

1 teaspoon ground cumin

1 teaspoon paprika

1 tablespoon fresh lime juice

1 tablespoon soy sauce

Salt and pepper to taste

Fresh cilantro, for garnish

Cooked rice, for serving

Marinate the Chicken: In a bowl, combine the chicken thighs, lime juice, soy sauce, cumin, paprika, salt, and pepper. Mix well so that the chicken is evenly coated. Allow it to marinate for at least 30 minutes (or up to 2 hours in the fridge for more flavor).

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and chopped chili peppers, cooking for an additional 2-3 minutes until fragrant.
