1 cup low-fat cottage cheese

1/2 cup black beans, drained and rinsed

1 medium avocado, diced

1 small red bell pepper, diced

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the cottage cheese, black beans, corn, diced avocado, red bell pepper, cherry tomatoes, and red onion. Stir gently to mix the ingredients without mashing the avocado.
