Southern Fried Salmon Patties

1 can (14.75 oz) wild caught salmon, drained and flaked

1/2 cup breadcrumbs (preferably panko for extra crunch)

1/4 cup finely chopped green onions

1/4 cup bell pepper, finely diced (any color)

1/4 cup mayonnaise

1 large egg, beaten

1 teaspoon Dijon mustard

1 teaspoon Worcestershire sauce

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

Vegetable oil, for frying

Lemon wedges, for serving

Prepare the Mixture: In a large mixing bowl, combine the flaked salmon, breadcrumbs, chopped green onions, diced bell pepper, mayonnaise, beaten egg, Dijon mustard, Worcestershire sauce, garlic powder, onion powder, paprika, salt, and pepper. Mix well until all the ingredients are evenly incorporated.

    Form Patties: Using your hands, shape the mixture into patties, approximately 2 to 3 inches in diameter and about 1/2 inch thick. You should get around 8-10 patties depending on the size.

      Chill the Patties: For best results, place the formed patties on a plate and refrigerate for at least 30 minutes. This helps them firm up and maintain their shape during frying.

        Heat the Oil: In a large skillet, pour enough vegetable oil to cover the bottom of the pan (about 1/4 inch deep). Heat the oil over medium heat until it shimmers but isn’t smoking.

          Fry the Patties: Carefully place a few patties in the hot oil, making sure not to overcrowd the skillet. Fry for about 3-4 minutes on each side or until golden brown and crispy. Use a spatula to gently flip them.

            Drain Excess Oil: Once cooked, transfer the patties to a paper towel-lined plate to absorb any excess oil.

              Serve Warm: Serve the salmon patties hot with lemon wedges on the side for squeezing over the top. They pair wonderfully with a side of tartar sauce or a fresh salad.
