2 1/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground ginger

1 teaspoon ground cinnamon

1/2 teaspoon ground cloves

3/4 cup unsalted butter, softened

1 cup brown sugar, packed

1/4 cup molasses

1 large egg

1 teaspoon vanilla extract

Extra granulated sugar for rolling

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, and cloves until well combined.

      Cream Butter and Sugar: In a large bowl, use a hand mixer or stand mixer to cream the softened butter and brown sugar together until light and fluffy, about 3-4 minutes.

        Add Molasses and Egg: Mix in the molasses, followed by the egg and vanilla extract, until fully incorporated.

          Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Do not overmix.

            Chill the Dough: Cover the dough with plastic wrap and refrigerate for at least 30 minutes. This helps the cookies maintain their shape while baking.

              Form Cookies: Once chilled, use a cookie scoop or tablespoon to portion out the dough. Roll each portion into a ball, then roll in granulated sugar to coat.
