Ingredients

4 oz smoked salmon

1 medium cucumber

1/2 cup hummus (store-bought or homemade)

1/4 cup cream cheese (softened)

1 tablespoon fresh dill (chopped, plus extra for garnish)

1 tablespoon lemon juice

Fresh black pepper, to taste

Whole wheat or spinach tortillas (optional)

Instructions

Prep Cucumber: Start by washing the cucumber and slicing it thinly lengthwise using a mandolin or a vegetable peeler. You should have long strips.

Mix Hummus and Cream Cheese: In a bowl, combine the hummus, softened cream cheese, chopped dill, lemon juice, and black pepper. Stir until well blended and creamy.

Assemble Roll-Ups: If using tortillas, lay one tortilla flat on a clean surface. Spread a thin layer of the hummus mixture over the tortilla, leaving a small border at the edges. Arrange slices of smoked salmon on top, followed by the cucumber strips.

Roll: Starting from one end, carefully roll the tortilla tightly to form a log. If you're not using tortillas, simply roll the salmon and cucumber slices with a dollop of hummus in between.

Slice and Serve: Use a sharp knife to cut the roll into bite-sized pieces or pinwheels. Arrange them on a platter and garnish with additional dill if desired.

Enjoy: Serve the smoked salmon roll-ups as an appetizer, snack, or light lunch. They pair wonderfully with lemon wedges or a drizzle of balsamic glaze.
