Slow Cooker Stuffed Onions

4 large yellow onions

1 cup cooked quinoa or rice (white or brown)

1 lb ground turkey or beef (or plant-based alternative)

1 cup diced bell peppers (any color)

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

½ cup grated Parmesan cheese (optional)

1 cup crushed tomatoes (canned)

Fresh parsley, chopped for garnish

Olive oil for drizzling

Prepare the Onions: Peel the onions and carefully cut off the tops, creating a lid. Remove the inner layers with a spoon or knife, creating a hollow space. Set aside the inner onion layers for the stuffing mixture.

    Make the Filling: In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced inner onion layers, garlic, and bell peppers. Sauté for about 5-7 minutes until softened. Add the ground turkey or beef, oregano, smoked paprika, salt, and pepper. Cook until the meat is browned, about 5-8 minutes. Stir in the cooked quinoa or rice and half of the Parmesan cheese. Mix until well combined.

      Stuff the Onions: Take each hollowed-out onion and carefully fill it with the meat and quinoa mixture. Pack it in well, but leave a little space at the top; place the lids back on the onions if desired.

        Prepare the Slow Cooker: Pour the crushed tomatoes into the bottom of the slow cooker. Place the stuffed onions upright in the slow cooker, ensuring they are not touching the lid. If there’s any leftover stuffing, you can add it around the onions.

          Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the onions are tender and the stuffing is heated through.

            Serve: Once cooked, carefully remove the stuffed onions from the slow cooker. Drizzle with a little olive oil, sprinkle the remaining Parmesan cheese on top, and garnish with fresh parsley. Serve warm with a side salad or crusty bread.
