Slow Cooker Queso Chicken Tacos

2 lbs boneless, skinless chicken breasts

1 cup salsa (your choice of spiciness)

1 packet taco seasoning

1 (10 oz) can diced tomatoes with green chilies

1 cup cream cheese, cubed

1 cup shredded cheddar cheese

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh, canned, or frozen)

12 small corn or flour tortillas

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Avocado slices (optional)

Instructions
 

Prepare the Chicken: Place the chicken breasts in the bottom of the slow cooker. Pour the salsa on top, followed by the taco seasoning and the diced tomatoes with green chilies.

    Add Cream Cheese: Add the cubed cream cheese into the slow cooker, nestling it among the other ingredients.

      Cook: Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through and easily shredded.

        Shred the Chicken: Once cooked, remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker.

          Add Cheese and Other Ingredients: Stir in the shredded cheddar cheese, black beans, and corn. Allow everything to heat through for an additional 15-20 minutes.
