4 bone-in chicken thighs, skin-on

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon dried thyme

1/2 teaspoon onion powder

1 cup chicken broth or stock

1 tablespoon soy sauce

2 tablespoons honey or maple syrup

1 tablespoon apple cider vinegar

1 cup baby carrots

1 small onion, sliced

3 garlic cloves, minced

Fresh parsley, chopped (for garnish)

Prepare the Chicken: Pat the chicken thighs dry with paper towels. This helps to achieve a nice sear. Season both sides generously with salt, pepper, smoked paprika, garlic powder, thyme, and onion powder.

    Sear the Thighs (Optional): In a skillet over medium heat, add the olive oil. Once hot, sear the chicken thighs skin-side down for about 5-7 minutes until the skin is golden brown. Flip and sear for another 2-3 minutes. This step adds incredible flavor but can be skipped if you prefer a simpler method.

      Set up the Slow Cooker: In the bottom of a slow cooker, add the sliced onions, minced garlic, and baby carrots. This will create a flavorful bed for the chicken thighs.

        Mix the Sauce: In a bowl, combine the chicken broth, soy sauce, honey (or maple syrup), and apple cider vinegar. Pour this mixture over the vegetables in the slow cooker.

          Add the Chicken: Place the seasoned chicken thighs on top of the vegetables and broth in the slow cooker. The skin should be facing up.

            Cook: Cover and cook on low for 6-8 hours or on high for 4 hours. The chicken should be tender and reach an internal temperature of 165°F (75°C).
