Skoudehkaris (Rice and Meat) Recipe

Ingredients
  

2 cups basmati rice

1 lb lamb or beef, cut into cubes

2 medium onions, finely chopped

4 cloves garlic, minced

1 tsp turmeric powder

1 tsp ground cinnamon

1 tsp black pepper

Salt to taste

3 cups water or stock (beef/lamb)

1/4 cup vegetable oil or ghee

1/4 cup raisins (optional)

1/4 cup slivered almonds (optional)

Fresh herbs for garnish (parsley or cilantro)

Instructions
 

Prepare the Rice: Rinse the basmati rice under cold water until the water runs clear. Soak it in water for about 30 minutes, then drain and set aside.

    Cook the Meat: In a large pot, heat the vegetable oil or ghee over medium heat. Add the chopped onions and sauté until they become golden brown. Add the minced garlic, followed by the cubed meat. Brown the meat on all sides.

      Spice It Up: Stir in the turmeric, cinnamon, black pepper, and salt. Cook for another 2-3 minutes until fragrant.

        Add Liquid: Pour in the water or beef/lamb stock and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer until the meat is tender (about 1-1.5 hours).

          Prepare the Rice Layer: Once the meat is nearly tender, place the soaked rice on top of the meat mixture. Do not stir. If using, sprinkle the raisins and slivered almonds over the rice.

            Steam the Rice: Carefully add enough water (around 1/2 cup) to cover the rice, if needed. Cover the pot with a tight-fitting lid and cook on low heat for about 30-35 minutes, or until the rice is fluffy and cooked through.

              Fluff and Serve: Once the rice is done, gently fluff it with a fork, mixing in the meat from underneath without breaking the grains. Garnish with fresh herbs before serving.
