2 ripe bananas, mashed

1 cup all-purpose flour

2 tablespoons sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon cinnamon (optional)

1/2 cup milk

1 large egg

1 teaspoon vanilla extract

Oil for frying

Powdered sugar for dusting (optional)

Maple syrup or honey for serving (optional)

Instructions
 

In a large mixing bowl, combine the mashed bananas, flour, sugar, baking powder, baking soda, salt, and cinnamon. Stir until well mixed.

    In another bowl, whisk together the milk, egg, and vanilla extract until combined.

      Pour the wet ingredients into the dry ingredients, mixing gently until just combined. Be careful not to overmix; it’s okay if there are a few lumps.

        Heat a skillet over medium heat and add enough oil to coat the bottom (about 1/4 inch).
