Ingredients

1 cup cottage cheese (preferably small curd)

4 large hard-boiled eggs, peeled and chopped

1/4 cup Greek yogurt (or mayonnaise for a richer taste)

2 tablespoons Dijon mustard

1 tablespoon fresh lemon juice

1/4 cup diced celery

1/4 cup finely chopped red onion

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Salt and pepper to taste

Optional: smoked paprika for topping

Optional: lettuce leaves for serving

Instructions

In a large mixing bowl, combine the cottage cheese and Greek yogurt (or mayonnaise) until smooth and creamy.

Add in the Dijon mustard and lemon juice, mixing well to incorporate all flavors together.

Gently fold in the chopped hard-boiled eggs, making sure to distribute them evenly without breaking them too much.

Add the diced celery, chopped red onion, and fresh dill, mixing gently until everything is well combined.

Season the salad with salt and pepper to taste. Feel free to add more lemon juice if a tangier flavor is desired.

If using smoked paprika, sprinkle a pinch on top for an extra layer of flavor.

Serve immediately on a bed of lettuce or as a filling for sandwiches and wraps. Enjoy!
