Ingredients
  

2 cups cooked jasmine or short-grain rice

1 cup spinach, blanched and squeezed dry

1 carrot, julienned

1 zucchini, julienned

1 cup bean sprouts, blanched

1 cup shiitake mushrooms, sliced

2 eggs

2 tablespoons gochujang (Korean red pepper paste)

1 tablespoon sesame oil

2 teaspoons soy sauce

2 teaspoons vegetable oil

Sesame seeds, for garnish

Green onions, chopped, for garnish

Salt, to taste

Instructions
 

Prepare the Vegetables:

    - In a skillet over medium heat, add 1 teaspoon of vegetable oil. Add the zucchini and carrots, season with salt, and stir-fry for about 2-3 minutes until slightly tender. Remove from heat and set aside.

      - In the same skillet, add another teaspoon of vegetable oil and sauté the shiitake mushrooms until browned, about 4-5 minutes. Remove from heat and set aside.

        Cook the Eggs:

          - In a separate pan, fry the eggs sunny-side up or to your desired doneness. Set aside.

            Assembly:

              - In a large serving bowl or plate, layer a base of cooked rice. Arrange the spinach, stir-fried carrots, zucchini, blanched bean sprouts, shiitake mushrooms, and fried egg decoratively on top of the rice.

                Finishing Touches:

                  - Drizzle sesame oil and soy sauce over the assembled ingredients. Add a generous dollop of gochujang for heat, or serve it on the side for those who prefer milder flavors.

                    Garnish:

                      - Sprinkle sesame seeds and chopped green onions over the dish for added crunch and flavor.

                        Serve:
