Ingredients
  

1 lb (450g) Italian sausage (chicken, turkey, or pork)

2 cups Brussels sprouts, halved

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 red onion, cut into wedges

2 cups baby potatoes, halved (or diced)

4 tablespoons olive oil

2 teaspoons garlic powder

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Preheat the oven: Preheat your oven to 425°F (220°C).

    Prepare the sausage: If using link sausages, slice them into bite-sized pieces. If using bulk sausage, crumble it into pieces.

      Prepare the vegetables: In a large mixing bowl, combine Brussels sprouts, bell peppers, red onion, and baby potatoes.

        Season everything: Drizzle the olive oil over the veggies and add the garlic powder, oregano, smoked paprika, salt, and pepper. Toss everything together until the veggies are well coated.

          Combine with sausage: Add the sausage pieces to the bowl and toss again to mix the sausage with the veggies evenly.

            Spread on a sheet pan: Line a large baking sheet with parchment paper or lightly grease it. Spread the sausage and veggie mixture in a single layer on the pan to ensure even cooking.

              Roast in the oven: Bake in the preheated oven for 25-30 minutes, stirring halfway through, until the sausage is cooked through (internal temperature should reach 160°F/70°C) and the veggies are tender and slightly crispy.

                Garnish and serve: Once done, remove from the oven and let it cool slightly. Garnish with fresh parsley if desired before serving.
