Ingredients

1 cup sesame seeds (lightly toasted if preferred)

1 cup raw honey or maple syrup

1/2 cup almond butter or peanut butter

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/4 cup chopped nuts (such as almonds or walnuts)

1/4 cup dried fruits (such as cranberries or apricots), chopped

Cooking spray or parchment paper for lining the pan

Instructions

Prepare the Pan: Line an 8x8-inch baking dish with parchment paper or lightly coat it with cooking spray. This will prevent the bars from sticking.

Toast the Sesame Seeds (Optional): If you prefer a nuttier flavor, lightly toast the sesame seeds in a dry skillet over medium heat for about 5 minutes, stirring frequently until golden. Remove from heat and let it cool.

Mix Wet Ingredients: In a medium saucepan, combine the honey (or maple syrup) and almond butter (or peanut butter). Heat over low heat while stirring until the mixture is fully combined and smooth. Remove from heat and stir in the vanilla extract and salt.

Combine Ingredients: In a large bowl, mix the toasted sesame seeds, chopped nuts, and dried fruits. Pour the warm almond butter mixture over the dry ingredients and mix well, ensuring everything is evenly coated.

Press into Pan: Transfer the mixture to the prepared baking dish. Using a spatula or your hands (wet them slightly to prevent sticking), press the mixture down firmly and evenly.

Chill: Cover the dish with plastic wrap and refrigerate for at least 2 hours or until the bars are firm.

Cut and Serve: Once set, remove from the refrigerator, lift out the parchment paper, and place on a cutting board. Cut into squares or rectangles.

Store: Store the sesame seed bars in an airtight container in the refrigerator for up to a week. Enjoy them as a snack or a healthy dessert!
