Ingredients

4 large eggs

1 cup fresh spinach, chopped

1 ripe avocado, diced

2 tablespoons milk (or plant-based alternative)

1 tablespoon olive oil or butter

Salt and pepper to taste

1 clove garlic, minced (optional)

1/4 teaspoon red pepper flakes (optional)

Fresh herbs (such as parsley or cilantro) for garnish

Instructions

Prepare the Ingredients: Gather all ingredients. Chop the spinach and dice the avocado. If using garlic, mince it finely.

Whisk the Eggs: In a medium bowl, crack the eggs and add the milk. Season with salt and pepper. Whisk until well combined and frothy.

Cook the Spinach: In a non-stick skillet, heat the olive oil or butter over medium heat. Add the minced garlic (if using) and sauté for about 30 seconds until fragrant. Then, add the chopped spinach and cook for about 1-2 minutes until wilted.

Scramble the Eggs: Reduce the heat to low. Pour the whisked eggs into the skillet with the spinach. Let them sit for a few seconds, then gently stir with a spatula. Continue stirring slowly until the eggs start to set but are still slightly runny.

Add Avocado: Once the eggs are about halfway done, gently fold in the diced avocado and red pepper flakes if desired. Cook until the eggs are fully scrambled but still soft and creamy (about 2-3 more minutes).

Serve: Remove from heat and garnish with fresh herbs. Serve your spinach and avocado scramble warm, perhaps with toasted bread or as a filling for a breakfast wrap.
