2 cups long-grain rice (preferably Egyptian rice)

1 tablespoon vegetable oil or butter

1 medium onion, finely chopped

4 cups chicken or vegetable broth

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon ground cinnamon

Salt and pepper to taste

1 cup heavy cream

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Rinse the Rice: Start by rinsing the rice under cold water until the water runs clear to remove excess starch. Drain and set aside.
