Roasted Rice With Nuts

1 cup basmati rice

2 cups vegetable broth or water

1/2 cup mixed nuts (almonds, cashews, and walnuts), chopped

2 tablespoons olive oil or ghee

1 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon cumin seeds

1/2 teaspoon turmeric powder

1/4 teaspoon red chili flakes (adjust to taste)

Salt, to taste

Fresh cilantro or parsley, for garnish

Instructions
 

Preheat the oven to 350°F (175°C).

    Rinse the basmati rice under cold water until the water runs clear. This helps remove excess starch and keeps the rice fluffy.

      In a medium-sized pot, heat 1 tablespoon of olive oil or ghee over medium heat. Add the cumin seeds and sauté for about 30 seconds until they are fragrant.

        Add the chopped onion to the pot and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

          Add the rinsed rice to the pot and toast it for about 2-3 minutes, stirring frequently. This helps to enhance the nutty flavor of the rice.

            Pour in the vegetable broth or water, turmeric powder, red chili flakes, and salt. Stir well and bring to a boil.

              Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes or until the rice is tender and liquid is absorbed.

                Meanwhile, spread the mixed nuts on a baking sheet and roast them in the preheated oven for about 7-10 minutes, or until they are golden and fragrant. Keep a close eye to prevent burning.

                  Once the rice is done, fluff it with a fork and mix in the roasted nuts and remaining tablespoon of olive oil or ghee. Adjust seasoning to taste.

                    Garnish with fresh cilantro or parsley before serving.
