4 slices of sourdough bread

8 oz cream cheese, softened

1 cup shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

3 fresh jalapeños

2 tbsp olive oil

1 tsp garlic powder

1/2 tsp smoked paprika

Salt and pepper to taste

4 tbsp unsalted butter, softened

Instructions
 

Preheat your oven to 400°F (200°C).

    Slice the jalapeños in half lengthwise and remove the seeds for less heat (or leave them in if you like it spicy!). Place the jalapeño halves on a baking sheet, cut side up.

      Drizzle the jalapeños with olive oil, and sprinkle with salt, pepper, garlic powder, and smoked paprika. Roast in the oven for about 15-20 minutes, or until they are tender and slightly charred.

        In a mixing bowl, combine the softened cream cheese, sharp cheddar, and Monterey Jack cheese. Mix until smoothly blended.

          Once the jalapeños are done, remove them from the oven and chop them into small pieces. Fold them into the cheese mixture.

            Heat a large skillet over medium heat. Spread softened butter on one side of each slice of sourdough bread.

              Place two slices of bread, buttered side down, in the heated skillet. Generously pile the jalapeño cheese mixture on top of these slices. Cover with the remaining two slices of bread, buttered side up.

                Cook for about 4-5 minutes, or until the bottom is golden brown. Carefully flip the sandwiches and continue to cook for another 4-5 minutes until the second side is golden brown and the cheese is melted.

                  Remove from heat, slice the sandwiches in half, and serve warm. Enjoy your deliciously cheesy creation!
