1 large cucumber, peeled and diced

1 cup freshly squeezed lemon juice (about 4-6 lemons)

1/2 cup granulated sugar (adjust to taste)

4 cups cold water

1/4 cup fresh mint leaves, plus extra for garnish

Ice cubes

Lemon slices, for garnish

Instructions
 

In a blender, combine the diced cucumber and lemon juice. Blend until smooth, then strain the mixture through a fine-mesh sieve into a large pitcher to remove the pulp.

    Add the sugar to the pitcher and stir until fully dissolved. If you prefer a sweeter lemonade, adjust the sugar to your liking.

      Pour in the cold water and mix well. Taste and adjust sweetness or water to achieve your desired flavor.

        Add in the fresh mint leaves and let the mixture sit for at least 30 minutes in the refrigerator to infuse the flavors.

          Once chilled, serve the cucumber lemonade over ice cubes in tall glasses.
