Quick & Easy Homemade Butter Chicken

1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

1 cup plain yogurt

2 tablespoons lemon juice

2 tablespoons garam masala

1 teaspoon turmeric powder

1 teaspoon cumin powder

1 teaspoon coriander powder

1 teaspoon red chili powder (adjust to taste)

4 tablespoons butter

1 large onion, finely chopped

4 cloves garlic, minced

1 inch ginger, grated

1 can (14 oz) crushed tomatoes

1 cup heavy cream

Salt, to taste

Fresh cilantro, for garnish

Instructions
 

Marinate the Chicken: In a bowl, mix together yogurt, lemon juice, garam masala, turmeric, cumin, coriander, and red chili powder. Add the chicken pieces, coat well, and let marinate for at least 30 minutes (or up to overnight in the fridge).

    Cook the Chicken: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the marinated chicken pieces (discard excess marinade) and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Sauté the Aromatics: In the same skillet, melt the remaining 2 tablespoons of butter. Add the chopped onion and sauté until soft and translucent, about 5 minutes. Then add the garlic and ginger, cooking for another minute until fragrant.

        Make the Sauce: Pour in the crushed tomatoes, bringing the mixture to a simmer. Reduce the heat and let it cook for about 10 minutes, stirring occasionally.

          Creamy Finish: Stir in the heavy cream, and season with salt to taste. Allow the sauce to simmer for another 5 minutes, thickening slightly.

            Combine & Serve: Add the cooked chicken back into the skillet, stirring to combine with the sauce. Simmer for an additional 5 minutes so the flavors meld together.

              Garnishing: Garnish with freshly chopped cilantro before serving.
